On Friday, August 7, Crittenden Restaurant and Flinders Truffles will come together for a one-night-only collaboration celebrating one of winter’s most luxurious ingredients: the Australian black truffle.
Set against the backdrop of the Mornington Peninsula, the evening promises five carefully curated courses, expertly paired wines and the opportunity to hear directly from the people behind one of Victoria’s most respected truffle farms.

A Menu Built Around the Truffle
Created by Executive Chef Bruno Melo, the five-course menu showcases fresh truffle in ways that complement rather than overpower each dish.
Guests will begin with brioche topped with caviar, spanner crab, fresh truffle and finger lime before moving to a delicate chicken wing filled with scallop mousse, accompanied by truffle jus, bunya nut and fermented apple.
The menu continues with Western Australian marron served alongside pommes aligot, Brillat-Savarin and generous shavings of fresh truffle, before the main course of Sher Wagyu Full Blood MS9+ sirloin paired with black garlic, maitake mushroom and even more freshly shaved truffle.
Dessert offers a fitting finale, combining 75 per cent Tanzanian single-origin chocolate with brown butter, toasted hazelnut, freeze-dried truffle and native Davidson plum.
Each course has been thoughtfully matched with wines from the Crittenden collection, showcasing the winery’s reputation for elegant cool-climate wines alongside the earthy richness of freshly harvested truffles.

While the menu is undoubtedly the headline act, the evening is about far more than five beautifully prepared courses.
Flinders Truffles founders Jane and Tony Groves will share the story behind their Mornington Peninsula farm, offering guests a deeper understanding of Australia’s growing truffle industry, from cultivation and harvesting to what makes fresh winter truffles so highly prized.
The wines will be introduced throughout the evening, adding another layer to an experience designed to celebrate craftsmanship, provenance and the unique flavours of the season.
